Grilled Summer Vegetable Salad

Ingredients:

  • 2 zucchinis, sliced lengthwise
  • 2 bell peppers (any color), halved and seeds removed
  • 1 large eggplant, sliced into rounds
  • 1 red onion, sliced into thick rings
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions:

1.       Preheat the grill to medium-high heat.

2.       In a large bowl, toss the sliced vegetables with olive oil, salt and pepper.

3.       Grill the vegetables for 3-4 minutes on each side or until they are tender and have grill marks.

4.       Arrange the grilled vegetables on a platter, drizzle them with balsamic vinegar and garnish with fresh basil leaves.

5.       Serve the grilled summer vegetable salad as a side dish or as a light and refreshing main course.

Summer Vegetable Stir-Fry

Ingredients:

  • 1 cup cherry tomatoes, halved
  • 1 cup snap peas, trimmed
  • 1 cup sliced summer squash
  • 1 cup sliced mushrooms
  • 1 bell pepper (any color), thinly sliced
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce (or tamari for a gluten-free option)
  • 1 tablespoon sesame oil
  • 1 tablespoon grated fresh ginger
  • 2 green onions, sliced (for garnish)

Instructions:

1.       Heat the sesame oil in a large skillet or wok over medium-high heat.

2.       Add the minced garlic and grated ginger, and sauté for 1-2 minutes until fragrant.

3.       Add the snap peas, summer squash, mushrooms and bell pepper. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.

4.       Toss in the cherry tomatoes and soy sauce, and continue to stir-fry for another 1-2 minutes.

5.       Remove the skillet from the heat and garnish with sliced green onions.

6.       Serve the summer vegetable stir-fry alongside a protein source like grilled chicken and place it over brown rice or quinoa for a delicious and nutritious meal.

Fresh Corn and Tomato Salad

Ingredients:

  • 4 ears of fresh corn, kernels cut off the cob
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 cup finely chopped red onion
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons lime juice
  • 2 tablespoons extra-virgin olive oil
  • Salt and pepper to taste

Instructions:

1.       In a large bowl, combine the fresh corn kernels, cherry tomatoes, diced cucumber, red onion and chopped cilantro.

2.       In a separate small bowl, whisk together the lime juice and extra-virgin olive oil to make the dressing.

3.       Pour the dressing over the vegetable mixture and toss until everything is well combined.

4.       Season the salad with salt and pepper to taste.

5.       Allow the flavors to meld together in the refrigerator for at least 30 minutes before serving.
