Healthy Winter Soup Recipes: Easy, Hearty and Delicious

  • 4 cups vegetable broth

Instructions:

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, parsnips and garlic. Sauté for 5 minutes, until softened.
  2. Stir in lentils, diced tomatoes, vegetable broth, cumin and paprika. Bring to a boil, then reduce to a simmer.
  3. Cook for 25–30 minutes, or until lentils and vegetables are tender.
  4. Season with salt and pepper to taste, and garnish with fresh parsley before serving.

2. Creamy Butternut Squash Soup

This velvety soup is naturally creamy thanks to the butternut squash and a hint of coconut milk. Packed with vitamins A and C, it’s a nourishing choice for supporting your immune system during the colder months.

Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cups butternut squash, peeled and cubed
  • 2 carrots, chopped
  • 3 cups vegetable broth
  • 1/2 cup light coconut milk
  • 1 teaspoon curry powder (optional)
  • Salt and pepper to taste

Instructions:

  1. Heat olive oil in a large pot over medium heat. Add onion and sauté until translucent.
  2. Add butternut squash, carrots and vegetable broth. Bring to a boil, then reduce heat and simmer for 20–25 minutes, or until vegetables are soft.
  3. Use an immersion blender (or transfer to a blender in batches) to blend the soup until smooth.
  4. Stir in coconut milk and curry powder (if using). Season with salt and pepper, and reheat before serving.

3. Chicken and Kale Soup with Lemon

This light yet flavorful soup is packed with lean protein and leafy greens, perfect for supporting your energy and immune health during winter. A touch of lemon adds a refreshing brightness.

Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 2 celery stalks, chopped
  • 2 carrots, chopped
  • 2 cups cooked shredded chicken
  • 4 cups chicken broth
  • 2 cups kale, chopped
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions:

  1. Heat olive oil in a large pot over medium heat. Add onion, garlic, celery and carrots. Sauté for 5 minutes, until softened.
  2. Add shredded chicken and chicken broth. Bring to a boil, then reduce heat and simmer for 10 minutes.
  3. Stir in chopped kale and cook for another 5 minutes, until wilted.
  4. Add lemon juice, season with salt and pepper, and serve warm.
